Galangal is a root that is part of the ginger family and is used frequently in Thai, Cambodian, Malaysian and Vietnamese cuisine.
Galangal does have a ginger flavor however it is punchier with notes of cardamom and pepper. Use in dishes with coconut milk, fennel, lemon and garlic!
To substitute galangal powder for fresh galangal, use 1 1/2 teaspoons of galangal powder to 1 tablespoon of fresh chopped galangal.
